Vegetarian Sushi Platter – Makizushi

Sushi 1This platter is 100% vegetarian and stuffed with nutrition too!
Sushi 2Wondering how to make vegetarian Sushi? This platter was made with , , cucumber and , it is a very healthy alternative to traditional cooking on weeknights. All you need are:

  • Sushi rolling mat
  • Sushi
  • Nori sheets (the dark green wrapper)
  • Vegetable juliennes of different colors and tastes
  • Japanese rice vinegar (with some sugar and )

Cook the rice, cook the vinegar with the sugar and salt for a minute, spread the nori sheet on the mat, spread the rice on the mat, leaving a little less than an inch at the opposite end of the mat. Put some of the across the width of the nori sheet. Using the mat, roll the sheet, tightly, dont worry, it wont break. When done, keep aside for a few minutes, then slice.

Sushi 3Since it doesn’t take too long to cook (15 – 20 minutes) and looks great, the kids love it! The cubes are stir fried tofu, all the green stuff is chopped cucumber, the green on the left are lettuce leaves, the white slices are red radish and the red stuff next to the cucumber are halved red radishes, with the stalks left on.The in the centre is Japanese rice vinegar, light soya , paste, sesame oil and paste. The little blob next to the lemons and tofu is paste.
