California Prunes and Mango Chutney

Nutritionally this recipe is rich in iron. A high source of iron, Prunes contains 7 mg of Iron per 100gms.Prunes aid in the process of respiration at the cellular level, by synthesizing the oxygen carrier, hemoglobin. Anyone suffering from anemia, weakness due to low hemoglobin can include this in the meal.

Ingredients

  • 500 grams California Prunes
  • 500 grams Raw Mangoes
  • 100 grams Chopped
  • 30 grams Chopped
  • 10 grams Chopped
  • 5 grams Red Chilly Powder
  • 5 grams Crushed Black
  • 50 ml White Vinegar
  • 200 grams Sugar
  • 50 ml Oil
  • 20 grams Chopped Almonds

Method

  1. Peel and grate the mangoes.
  2. Chop the California Prunes.
  3. Mix sugar, mangoes and California Prunes in a kadhai and cook over medium heat.
  4. Add the remaining ingredients except chopped almonds and cook on a slow fire until the mixture has a jam-like consistency.
  5. Add chopped almonds.

Cool and transfer the chutney to a jar and enjoy the unique combination and taste of California Prunes and mangoes.
