Here’s a quick daily recipe for Colocasia (Arbi in Hindi) with Tomatoes.
1. Peel and cut the colocasia into strips
2. Cut your tomatoes into strips
3. Chop some onions
4. Heat a little oil
5. Add cumin seeds (jeera), followed by the onions
6. Add some chilli powder, turmeric powder and salt
7. Add the colocasia and stir fry for a few minutes
8. Add the tomatoes
9. Bring the heat down to a simmer and cook covered until done.
Serve with hot rotis.

OK, what is Colocassia? I’ve never seen anything called that at our Asian shops.

Hi all! Found out about Colocasia: A root, tuberous vegetable that comes from India. It is a very, very close relative of the Taro root, original from Africa brought to the Americas by the slave trade. Colocasia seems to be one of many varieties of the Taro root, which is also known in Latin American and Caribbean countries as yautía and malanga. Can be boiled until soft and able to mash. Excellent as side dish instead of potatoes with a good drizzle of olive oil and salt.
