Grilled Cottage Cheese on Toast

We decided to have a light lunch today – light in terms of preparation time, cooking time and overall effort. :-) My cooking is rarely light on calories.

Grilled Cottage Cheese on Toast
  • 4 Slices of bread
  • 4 Slices of fresh cottage cheese
  • 2 Medium size tomatoes
  • 1 Medium size onion
  • 3 tbsp olive oil
  • 3 tbsp melted butter
  • 1/2 tsp freshly grated black pepper
  • 1 tbsp [optional] tabasco
  • 1 green chilli [optional]

Method:

  1. Toast 4 slices of bread.
  2. Slice the tomato thinly
  3. Slice the onion thinly, separate the rings [as shown]
  4. Slit the green chilli pepper. Remove the seeds. Chop very finely.
  5. Mix the olive oil, melted butter, green chilly, pepper and tabasco
  6. Put the slices of cottage cheese on the toast
  7. Arrange the tomato and onions on the cottage cheese
  8. Brush lightly with the olive oil mixture.
  9. Put under a hot grill for 1 – 2 minutes, till the tomatoes and onions get slightly singed.
