Grilled Cottage Cheese on Toast

We decided to have a light lunch today – light in terms of preparation time, cooking time and overall effort.
My cooking is rarely light on calories.

Method:
- Toast 4 slices of bread.
- Slice the tomato thinly
- Slice the onion thinly, separate the rings [as shown]
- Slit the green chilli pepper. Remove the seeds. Chop very finely.
- Mix the olive oil, melted butter, green chilly, pepper and tabasco
- Put the slices of cottage cheese on the toast
- Arrange the tomato and onions on the cottage cheese
- Brush lightly with the olive oil mixture.
- Put under a hot grill for 1 – 2 minutes, till the tomatoes and onions get slightly singed.

What a marvelous picture photo and recipe
This seems almost like an anglicized version of the italian capreze salad, which is tomato, fresh basil, and fresh mozzarella on toasted bread. This sounds delicious and I can’t wait to try it. Thanks!
@Tom: Now that you mention it, yes, it does seem like a variation of the insalata caprese. do let us know how it turns out. a photo would be cool!
hey try this recipe
Ingredients
* 4 thick slices of ciabatta
* 200 grams goats cheese,cut into 8 slices
* 60 grams salad leaves
* 1 orange zest
* for salsa;
* 40 grams hazelnuts,dry roasted until browned
* 4 tablespoons parsley
* 1 clove garlic
* 1 juice and zest of orange
* 1 1/2 tablespoons balsamic vinegar
Instructions
first make salsa.put nuts in food processor,add remaining igredients and blend for 15 seconds.transfer to small pan and heat through gently.
meanwhile toast bread on one side.place goats cheese on untoasted side and grill for 2 minutes under grill until the cheese is golden and bubbling.
garnish with orange zest and lettuce leaves and serve with warm salsa.

this looks delicious, pretty extravagent for a “light” lunch haha. Have you tried it with any other cheeses besides Cottage? Let me know if you do and how it goes!
@Wisconsin Cheese: Yup, it was perhaps a bit OTT for a ‘light’ lunch, but then I did say ‘light’ and not ‘tedius’.
WOW! I tried out this recipe….really good, and you are right, light on time, but not on calories! I had to use canned chillis but that worked out fine
