In the interests of economy, I decided that I would buy a free range, local to eat for the week- lunch and . I also roasted potatoes from my daughter’s garden with . I simmered some cauliflower and runner beans (again from Jay’s garden) in lightly salted water and made a gravy from the juice of the .

On Monday, I simply re-heated some of the and the remains of the vegetables. Not quite as tasty as it was on Sunday but I wasn’t hungry afterwards.

Tonight, I chopped some of the leg and fried it with a (bottled) roasted red pepper, some of the remaining onions and gravy and combined it with cous-cous which I made with a spoonful of Marigold stock granules, some thyme leaves, a sprinkling of garlic granules, a squeeze of and a knob of butter. It was quite . I wonder what tomorrow will bring – oh yes, more !

  1. Isn’t it amazing, the infinite varieties of ways we can use a chicken, from the roast, to cubes and slices, used in lots of different dishes. Our most recent roast chicken got us two full dinners for two, and two lunches for two in sandwiches.

  5. Really liked the way you picked out your own vegetables from your daughter’s garden. Might only be a bit, but helps to save quite a lot done over time. Love chicken too, but now I might consider growing my own vegs too.

  6. Brandon, growing your own food is the most satisfying thing to do. It makes you healthy by being outdoors and getting excercise and by eating fresh food. I hope you enjoy it.
