Thai Coconut Milk Soup This amazingly simple soup is nutritious and you can make it even more so by adding more vegetables. The base of the flavor is in the two key ingredients – galangal and . Based on coconut , it can be a full meal in itself – just add noodles or serve on a bed of noodles.Making this is quite simple – simply chopped vegetables, thinly sliced galangal and bruised with seasoning in coconut . You’ll need to it for a while to get the flavors of the galangal and to permeate into the soup – when its done – divine!

Note: For the non-vegetarian version, just add some shredded boiled to it, or raw, finely sliced .
