You’d never have thought a humble piece of fried dough could have so much popularity, business potential or variations. Mad Over Donuts, who recently opened an outlet in the Great India Place, NOIDA, certainly believe this and going by the popularity of their only outlet in the NCR, it looks like they’ve put their money in the right place.
According to Wikipedia: “A doughnut, or donut, is a sweet, deep-fried (or sometimes, baked) piece of dough or batter. The two most common types are the torus-shaped ring doughnut and the filled doughnut, a flattened sphere injected with jam, jelly, cream, custard, or another sweet filling. A small spherical piece of dough, originally made from the middle of a ring doughnut, may be cooked as a doughnut hole. A doughnut also looks similar to a bagel, which uses the same shape as a ring donut.” We’ve visited their outlet a few times and have never been anything but delighted with their wares. The range of sweet flavors include coconut, mango, caramel and coffee among others. They even have two savory doughnuts – talk about getting creative! Did I mention that the place is run by Executive Chef Kishi Arora. Kishi has spent two years doing her post graduation in the CIA – thats the Culinary Institute of America, which is considered to be one of the best institutes in the world. Obviously, she has applied that learning to MOD, to come up with the superb offerings on display. To quote Kishi, “i like to do seasonal flavours- for monsoons we have wild mint and apple jelly flavour”. The staff is friendly and the packaging attractive. there preperation is just FANTASTIC!!!! i like al the varieties provided there…especially HAZZLE DAZZLE N MIDNIGHT BEAUTY….m a regular customer in GIP…..n cant keep myself away from d mouth watering donuts…yummmy!!!!
Have always been crazy about Doughnuts. However I do not think there are many donut lovers in India. When ever I have fallen for a good looking donut I have been disappointed by the staleness of the inside, which leads me to believe they don’t get sold out on the day they are made.
Shall definitely try “Mad Over Donuts”
@Vinny: I think you’ll find that the stuff MOD cooks and hawks are quite good and never (so far anyway) stale. It is also fascinating watching their automatic doughnut frier.

@Sahil: Donuts are typically made using normal, proofed bread dough that is shaped and fried. I do not believe MOD donuts have eggs in them. The only possibility in my opinion is the glaze, which I think is (a) easy to do using vegetarian ingredients and (b) not required since MOD donuts usually have toppings. Frying gives it a lovely golden tone in any case.
@ Sahil: When i was working on the recipe i added eggs in the Noida outlet to begin with…the dounts did have egg powder in the dough.But now eggless are being made and instead a replacement is being used.
Any donut batter tends to have eggs and milk as they provide leavening; add color, texture, flavor and richness to the dough…over all they help bind the dough!
@kishi: I’m going to disagree with a part of your comment that says ‘any donut batter tends to have eggs…’. I believe most donut doughs do not use eggs. Perhaps your statement is true of commercial donut recipes though. I think there’s a Hawaiian variety called Malasada that uses eggs – not sure about that though.
